M for Macaron
If you love discovering new flavours, your stay in the Basque Country will be a great opportunity to try new recipes. You will discover many dishes in restaurants, and you can try a few recipes at home to take your taste buds on a journey. But don’t forget to explore sweet flavours such as the Basque macaron.
The macaron is very well known, but the Basque recipe stands out for its simple and generous cake, in the image of the Basque Country. You won’t find the usual smooth macaron, but rather a pastry reminiscent of the Basque hills. If you have the chance, we recommend discovering this Basque macaron for a new experience.
You can also easily make the recipe at home with just a few ingredients. All you need is ground almonds, sugar and 3 egg whites. You won’t need much, but you will have to start the day before. To begin, mix the almonds and sugar, and whisk the egg whites into stiff peaks separately. Then gently fold them in before lightly warming the mixture, which then goes into a piping bag. Pipe mounds of about 4 cm and leave them to rest overnight.
The next day, even out your macarons, make a small cut on top and bake them for 10 minutes. This recipe is very easy to follow, but it takes a little time before you can enjoy them. And if you want to be original, you can make a ganache to spread between the two halves of your macarons and fill them to your taste.
